Dean Han, the Korean-born chef whose pedigree in Canberra includes working at Chairman and Yip and Tipsy Bull, has set up his own kitchen at the Niche Markets which features a wide array of Japanese cuisine.

This is not just your typical Japanese food. As well as delicious authentic hot dishes such as ramen noodles, Umami also sells the popular poké bowels and sushi in the shape of donuts and tacos.
