Atlantic Salmon with a fresh herb & macadamia nut crust

Ready in 25 minutes | Serves 6



  • 2 cups toasted macadamias
  • zest of one lemon
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • juice of 1/2 lemon
  • 2 cups fresh herbs
  • pinch salt/pepper
  • 6 Atlantic salmon fillets



  1. In a blender or food processor, chop nuts & fresh herbs.

  2. Add zest, butter, oil & juice to the nuts to make a coarse paste. Add more lemon juice if necessary & season.

  3. Seal salmon on the chargrill skin side up.

  4. Turn over & place on a tray. Spray with canola spray & place a spoonful of macadamia nut crust on top.

  5. Bake in 200 o oven for 6 mins for medium rare.
