Atlantic Salmon with a fresh herb & macadamia nut crust
Ready in 25 minutes | Serves 6
- 2 cups toasted macadamias
- zest of one lemon
- 2 tablespoons butter
- 1 tablespoon olive oil
- juice of 1/2 lemon
- 2 cups fresh herbs
- pinch salt/pepper
- 6 Atlantic salmon fillets
In a blender or food processor, chop nuts & fresh herbs.
Add zest, butter, oil & juice to the nuts to make a coarse paste. Add more lemon juice if necessary & season.
Seal salmon on the chargrill skin side up.
Turn over & place on a tray. Spray with canola spray & place a spoonful of macadamia nut crust on top.
Bake in 200 o oven for 6 mins for medium rare.
